Curried Cauliflower

Ingredients

  • 1 medium cauliflower
  • 1 cup canned diced tomatoes
  • 3 garlic cloves, minced
  • 1 inch fresh ginger, grated
  • 2 tsp curry powder
  • 1/2 tsp each: salt, onion powder, garlic powder, paprika, cumin, black pepper

Cream

  • 1/2 cup coconut milk
  • 1/2 tbsp cornstarch
  • 1/3 tsp salt
  • 1/4 tsp smoked paprika

Instructions

Chop cauliflower into bite-sized florets and add to a large pot. Cover with salted water (or veggie broth) and bring to a boil. Cook until fork-tender, then drain.

Preheat oven to 360°F. In an oven-safe pan or casserole dish, add diced tomatoes, garlic, ginger, curry powder, and spices. Stir to combine, then add cooked cauliflower.

In a medium bowl, whisk coconut milk, cornstarch, salt, and paprika. Pour over cauliflower. Bake 20 minutes, stirring halfway. Serve with cooked rice or naan.
