Garlic Confit (Garlic‑Infused Oil)
Ingredients
- 2 cups peeled garlic cloves
- 2 cups olive oil
- 3 sprigs thyme
- 3–4 rosemary sprigs
- 1 tsp coarse salt
Instructions
- Heat oven to 275°F. Place garlic, oil, herbs, and salt in a baking dish.
- Bake 1–1½ hours, stirring occasionally, until garlic is soft and lightly golden (not browned).
- Cool, remove herbs, and transfer garlic and oil to a sealed jar (garlic fully submerged).
- Store refrigerated for several weeks or freeze for longer storage. Bring to room temperature before using.
