Garlic Confit (Garlic‑Infused Oil)

Ingredients

  • 2 cups peeled garlic cloves
  • 2 cups olive oil
  • 3 sprigs thyme
  • 3–4 rosemary sprigs
  • 1 tsp coarse salt

Instructions

  1. Heat oven to 275°F. Place garlic, oil, herbs, and salt in a baking dish.
  2. Bake 1–1½ hours, stirring occasionally, until garlic is soft and lightly golden (not browned).
  3. Cool, remove herbs, and transfer garlic and oil to a sealed jar (garlic fully submerged).
  4. Store refrigerated for several weeks or freeze for longer storage. Bring to room temperature before using.
