Honey Garlic Carrots

Ingredients

  • 6–8 medium carrots, peeled and cut into even sizes
  • 2 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried thyme
  • ½ tsp paprika
  • 1 tsp lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F.
  2. Peel and cut carrots into even pieces.
  3. In a bowl, mix melted butter, honey, olive oil, garlic, salt, pepper, and thyme.
  4. Toss carrots in the mixture until well coated.
  5. Spread carrots in a single layer on a baking sheet.
  6. Roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.
  7. Serve warm.
