Honey Garlic Carrots
Ingredients
- 6–8 medium carrots, peeled and cut into even sizes
- 2 tbsp unsalted butter, melted
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried thyme
- ½ tsp paprika
- 1 tsp lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F.
- Peel and cut carrots into even pieces.
- In a bowl, mix melted butter, honey, olive oil, garlic, salt, pepper, and thyme.
- Toss carrots in the mixture until well coated.
- Spread carrots in a single layer on a baking sheet.
- Roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.
- Serve warm.
