Mexican Papaya Salad

Ingredients

  • 1/4 cup red onion, thinly sliced
  • 2–3 large handfuls arugula
  • 1/2 large ripe papaya, cubed (3–4 cups)
  • 1–2 small cucumbers, sliced
  • 1/4 cup cilantro
  • 1 tbsp thinly sliced jalapeño

Cilantro Lime Dressing

  • 3 tbsp olive oil
  • 1 tbsp lime zest
  • 4 tbsp lime juice
  • 2 tbsp chopped cilantro
  • 1 tbsp chopped scallion
  • 2 tsp honey
  • 1/2 tsp each salt, pepper, coriander
  • Pinch chili flakes

Instructions

Peel, seed, and cube papaya. Place greens in a large bowl or platter and toss with half the onions. Add papaya, cucumber, and remaining onions.

Mix all dressing ingredients in a small bowl or jar. Spoon over salad before serving and toss gently. Finish with cilantro leaves and optional jalapeño or toasted coconut.
