Tzatziki Dip

Ingredients

  • 1 cup plain Greek yogurt (full fat is best)
  • 2/3 cup cucumber, seeds removed and diced
  • 2 tsp olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp fresh lemon zest
  • 1–2 cloves garlic, minced
  • ¼ cup fresh chopped dill
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Place diced cucumber in a strainer over a bowl and sprinkle with salt.
  2. Let sit for a few minutes to remove excess moisture, then pat dry.
  3. In a bowl, combine Greek yogurt, cucumber, and remaining ingredients.
  4. Mix until smooth and creamy.
  5. Top with extra dill, black pepper, and a drizzle of olive oil.
  6. Serve cold with pita chips, naan, or fresh vegetables.
