Vegetable Frittata

Ingredients

  • 8 eggs
  • 1/3 cup milk
  • 2 tbsp chopped chives
  • 3/4 tsp salt
  • 3/4 tsp black pepper
  • 2 tbsp margarine
  • 1 small onion, diced
  • ½ green bell pepper, diced
  • ½ red bell pepper, diced
  • 2 tbsp chopped thyme
  • 1 clove garlic, minced
  • 2 cups chopped arugula
  • 1 cup halved grape tomatoes
  • ½ cup cheese

Instructions

  1. Preheat oven to 350°F.
  2. Whisk eggs, milk, salt, and pepper in a bowl.
  3. Melt margarine in an oven-safe skillet over medium heat.
  4. Cook onion, peppers, and garlic until softened.
  5. Stir in arugula and tomatoes; cook until greens wilt.
  6. Pour egg mixture over vegetables.
  7. Cook 2–3 minutes, then sprinkle with cheese.
  8. Bake 20–25 minutes until set.
  9. Let cool slightly, slice, and serve.
