Vegetable Frittata
Ingredients
- 8 eggs
- 1/3 cup milk
- 2 tbsp chopped chives
- 3/4 tsp salt
- 3/4 tsp black pepper
- 2 tbsp margarine
- 1 small onion, diced
- ½ green bell pepper, diced
- ½ red bell pepper, diced
- 2 tbsp chopped thyme
- 1 clove garlic, minced
- 2 cups chopped arugula
- 1 cup halved grape tomatoes
- ½ cup cheese
Instructions
- Preheat oven to 350°F.
- Whisk eggs, milk, salt, and pepper in a bowl.
- Melt margarine in an oven-safe skillet over medium heat.
- Cook onion, peppers, and garlic until softened.
- Stir in arugula and tomatoes; cook until greens wilt.
- Pour egg mixture over vegetables.
- Cook 2–3 minutes, then sprinkle with cheese.
- Bake 20–25 minutes until set.
- Let cool slightly, slice, and serve.
