Bacon Onion Tomato Pie

Ingredients

1 (9-inch) pie crust
6 strips bacon, cooked and crumbled
1 large onion, thinly sliced
3 medium tomatoes, sliced (about 2 cups)
1 cup shredded cheddar cheese
½ cup shredded mozzarella cheese
½ cup mayonnaise
2 tbsp fresh chopped basil (or 1 tsp dried)
½ tsp salt
¼ tsp black pepper

Instructions

Preheat oven to 375°F.
Bake pie crust for 8 minutes, remove and set aside.
Cook bacon in a skillet, then crumble and set aside.
Using bacon drippings, sauté onions until soft and golden.
Layer half the tomatoes in the crust, then add onions and bacon.
Top with remaining tomato slices.
In a bowl, mix cheeses, mayonnaise, basil, salt, and pepper.
Spread evenly over the top.
Bake for 30–35 minutes until golden brown and bubbly.
Let rest for 10 minutes before slicing.
Serve warm.
