Cauliflower Mac & Cheese
Ingredients
1 head cauliflower, cut into bite-sized pieces
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
1 tsp garlic powder
¼ tsp onion powder
1 ½ cups whipping cream
4 oz cream cheese, cubed
2 ½ cups shredded cheese (mix of your choice)
¼ tsp paprika
Instructions
Preheat oven to 425°F.
Toss cauliflower with olive oil, salt, and pepper.
Spread on a foil-lined baking sheet and bake for 15–20 minutes until lightly browned.
In a large pot over low heat, add whipping cream and cream cheese.
Whisk until smooth and melted.
Add shredded cheese and stir until fully melted.
Add garlic powder and onion powder, mixing well.
Once smooth and just simmering, remove from heat and whisk vigorously.
Add roasted cauliflower and stir to coat evenly.
Sprinkle paprika on top.
Serve immediately.
