Feta & Pomegranate Baked Pears
Ingredients
- 4 firm ripe pears, halved and cored
- 1/3 cup pomegranate seeds
- 1/2 cup feta cheese, crumbled
- 1 tbsp olive oil
- Bacon crumbles
- 1 tsp fresh thyme
- 1/2 tsp rosemary
- 1–2 tsp lemon juice
- Salt & black pepper
- 2–3 tbsp chopped walnuts or pistachios
Instructions
- Preheat oven to 375°F.
- Prepare pears and brush with olive oil and lemon juice. Season with salt and pepper.
- Add small pieces of shallot or red onion into the pear centers (optional).
- Fill with feta and bacon, then sprinkle with herbs.
- Bake until pears are tender and feta is soft and slightly golden.
- Remove from oven and add pomegranate seeds.
- Top with chopped nuts for crunch.
- Optional: drizzle with balsamic glaze or olive oil before serving.
