Feta & Pomegranate Baked Pears

Ingredients

  • 4 firm ripe pears, halved and cored
  • 1/3 cup pomegranate seeds
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • Bacon crumbles
  • 1 tsp fresh thyme
  • 1/2 tsp rosemary
  • 1–2 tsp lemon juice
  • Salt & black pepper
  • 2–3 tbsp chopped walnuts or pistachios

Instructions

  1. Preheat oven to 375°F.
  2. Prepare pears and brush with olive oil and lemon juice. Season with salt and pepper.
  3. Add small pieces of shallot or red onion into the pear centers (optional).
  4. Fill with feta and bacon, then sprinkle with herbs.
  5. Bake until pears are tender and feta is soft and slightly golden.
  6. Remove from oven and add pomegranate seeds.
  7. Top with chopped nuts for crunch.
  8. Optional: drizzle with balsamic glaze or olive oil before serving.
