Ingredients
- 1/4 cup olive oil
- 4 large bell peppers, sliced into strips
- 2 large canned tomatoes
- 1 medium onion, sliced
- 4 cloves garlic, chopped
- Salt and pepper
- Fresh basil leaves
- Chili pepper flakes
- Balsamic vinegar
Instructions
- Add olive oil to a large pan and heat through.
- Add the peppers, tomatoes, onion, and garlic.
- Season with salt and pepper and stir.
- Cover and cook on medium-low heat for 30 minutes to 1 hour, depending on how soft you like the vegetables.
- Adjust seasoning as needed. Garnish with basil (whole or chopped).
- Sprinkle with chili flakes and drizzle with balsamic vinegar before serving.
