Peperonata

Ingredients

  • 1/4 cup olive oil
  • 4 large bell peppers, sliced into strips
  • 2 large canned tomatoes
  • 1 medium onion, sliced
  • 4 cloves garlic, chopped
  • Salt and pepper
  • Fresh basil leaves
  • Chili pepper flakes
  • Balsamic vinegar

Instructions

  1. Add olive oil to a large pan and heat through.
  2. Add the peppers, tomatoes, onion, and garlic.
  3. Season with salt and pepper and stir.
  4. Cover and cook on medium-low heat for 30 minutes to 1 hour, depending on how soft you like the vegetables.
  5. Adjust seasoning as needed. Garnish with basil (whole or chopped).
  6. Sprinkle with chili flakes and drizzle with balsamic vinegar before serving.
