Sweet & Spicy Tomato Jam

Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 tsp smoked paprika
  • 2 tsp salt
  • 1 tsp black pepper
  • 5 cups cherry tomatoes
  • ½ cup water
  • ¼ cup apple cider vinegar
  • ¼ cup dark brown sugar
  • 2 sprigs fresh thyme
  • ¼ tsp red pepper flakes

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté for about 5 minutes, until softened.
  3. Stir in garlic and spices, cooking for about 30 seconds.
  4. Add remaining ingredients and bring to a boil over high heat.
  5. Reduce heat to low and simmer for 25–30 minutes, stirring occasionally to prevent sticking.
  6. Once thick and jammy, remove and discard thyme sprigs.
  7. Let cool, then store in airtight glass jars in the refrigerator for up to 2 weeks.
