Sweet & Spicy Tomato Jam
Ingredients
- 2 tbsp olive oil
- 1 small onion, diced
- 4 cloves garlic, minced
- 2 tsp smoked paprika
- 2 tsp salt
- 1 tsp black pepper
- 5 cups cherry tomatoes
- ½ cup water
- ¼ cup apple cider vinegar
- ¼ cup dark brown sugar
- 2 sprigs fresh thyme
- ¼ tsp red pepper flakes
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté for about 5 minutes, until softened.
- Stir in garlic and spices, cooking for about 30 seconds.
- Add remaining ingredients and bring to a boil over high heat.
- Reduce heat to low and simmer for 25–30 minutes, stirring occasionally to prevent sticking.
- Once thick and jammy, remove and discard thyme sprigs.
- Let cool, then store in airtight glass jars in the refrigerator for up to 2 weeks.
