Chickpea, Cucumber & Feta Salad
Ingredients
- 2 cans chickpeas, rinsed and drained
- 1 large cucumber, chopped
- 8 oz feta cheese
- 1/2 cup red onion, diced
- 1/4 cup fresh basil, minced
For the Dressing
- 1/2 cup olive oil
- 1/4 cup white balsamic vinegar
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried parsley
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Instructions
Drain and rinse the chickpeas. Chop the cucumber, feta, red onion, and basil into bite-sized pieces. Add everything to a large mixing bowl.
In a small bowl, whisk together all dressing ingredients until well combined. Pour the dressing over the salad and toss until evenly coated. Serve fresh or chilled.
