Parmesan Zucchini Fries

Ingredients

  • Small zucchinis
  • Salt and black pepper
  • Panko bread crumbs
  • Eggs
  • Grated parmesan cheese
  • Ranch dressing (for serving)

Instructions
Preheat the oven to 425°F. Slice zucchini into fry-sized pieces. Beat eggs with salt and pepper. Mix panko and parmesan in a separate dish.

Dip zucchini into the egg, shake off excess, then coat in the panko mixture. Place on a lined baking sheet. Bake for 20–25 minutes, flipping halfway, until golden and crispy. Serve with ranch dressing.
