Blueberry Brownies with Blueberry Glaze

Ingredients

Brownies

  • 1½ cups blueberries
  • 10 tbsp butter, melted
  • 1¼ cups sugar
  • 2 eggs, room temperature
  • ½ tsp vanilla extract
  • ½ tsp salt
  • 1 cup all-purpose flour, sifted

Glaze

  • 1 cup powdered sugar, sifted
  • 2 tbsp milk
  • ⅛ tsp vanilla extract
  • Pinch of salt

Instructions

Blend the blueberries until smooth. Pour the puree into a saucepan and simmer over medium-low heat, stirring often, until slightly reduced. Remove from the heat and let cool.

Preheat the oven to 325°F. Line an 8×8-inch baking dish with parchment paper.

In a medium bowl, whisk together the melted butter and sugar. Add the eggs, vanilla, and salt, and mix well. Stir in the cooled blueberry puree, then gently fold in the flour until just combined.

Pour the batter into the prepared baking dish and spread evenly. Bake for 35–40 minutes, or until the center is set and a toothpick inserted in the middle comes out clean. Let cool completely.

To make the glaze, whisk together the powdered sugar, milk, vanilla extract, and salt until smooth. Spread half of the glaze over the cooled brownies. Once set, spread the remaining glaze on top and allow it to harden before serving.
